For the salsa

75g/21/2 oz radishes, finely sliced

5 spring onions (scallions), chopped

3 tomatoes, deseeded and chopped

juice of 1 lime

small handful coriander (cilantro), chopped

2 tbsp extra virgin olive oil

Time taken 45 minutes / Serves 4

Heat the olive oil in a deep-sided pan and gently sauté the onion, garlic, cumin seeds and paprika for 8–10 minutes until sticky and golden. Add the pearl barley and stir around in the pan for about 30 seconds before adding the stock. Cover with a lid and simmer for 10 minutes.

Cut the sweet potato into 2–3cm/3/4–11/4 inch chunks and add to the pan with the tomato purée. Cover and cook for around 15 minutes until the sweet potato is completely cooked through. Season with salt and pepper. If the stew seems too dry, add some extra stock.

While the stew is cooking, mix together all of the salsa ingredients, and season with salt and pepper.

Serve the cooked stew with the salsa spooned on top, sprinkled with nuggets of labneh or crumbled feta cheese.
